World's BEST Steak Queso
Comfort food with a little rebellion mixed in.
Smoky, cheesy queso loaded with tender steak — easy to make and impossible to stop eating.

This one was made right after I got my third HOA violation, bringing the total to $1,500.
And I still don’t really understand the problem. All I’m doing is smoking meat at the end of my driveway. No parties, no noise — just steak and vibes.
So instead of changing anything, I made steak queso.
There’s something therapeutic about cooking when you’re technically not supposed to. Especially when that steak ends up chopped and folded into molten queso. Comfort food with a little rebellion mixed in.
If smoking meat at the end of my driveway is wrong, then steak queso after a $1,500 violation felt like the right response.
10–12 oz steak (NY strip or similar)
1 tsp steak seasoning
Salt & pepper
1 tsp oil
12 oz Velveeta Queso Blanco, cubed
6 oz Colby Jack, cubed or shredded
6 oz Cream Cheese, cubed
3 oz Smoked Cheddar (optional)
¾ can Rotel (7–8 oz)
¾ can Diced Green Chiles (3 oz)
½ cup Whole Milk
¼–⅓ yellow onion, finely diced
1 clove garlic, minced
1 tbsp butter
Seasonings
1 tsp steak seasoning
Pinch smoked paprika (optional)
Dash hot sauce (optional)
Salt & black pepper, to taste
Cilantro or green onion (optional)
Lime wedge
Tortilla chips
Steak
Step 1
Season steak generously with steak seasoning, salt, and pepper.

10-12 oz steak (NY strip or similar)
Step 2
Sear on high heat until crusty and medium-rare.
Step 3
Let rest, slice against the grain, then chop into bite-size pieces.
Step 4
Set aside.
Onions and Garlic
Step 1
In the same pan with steak drippings, melt 1 tbsp butter.

Add diced onion; cook 2–3 minutes until soft and golden.
¼–⅓ yellow onion, finely diced
Step 3
Add garlic; cook 30–45 seconds.

Step 4
Remove from heat and set aside.
Queso
Step 1
Place Velveeta block in the center of a 10-inch pan.
12 oz Velveeta Queso Blanco, cubed
Step 2
Surround it with Colby Jack, Cream Cheese, and Smoked Cheddar.
6 oz Colby Jack, cubed or shredded
6 oz Cream Cheese, cubed
3 oz Smoked Cheddar (optional)
Step 3
Add Rotel and Diced Green Chiles around the cheese.
¾ can Rotel (7–8 oz)
¾ can Diced Green Chiles (3 oz)
Step 4
Pour ½ cup milk over everything.
½ cup Whole Milk
Step 5
Season the top with steak seasoning, smoked paprika, and hot sauce.

Smoke the Queso
Step 1
Place the pan on the smoker at 225°F.
Step 2
Smoke 45–60 minutes, stirring every 15–20 minutes.
Step 3
Melt until smooth, silky, and bubbling.
Combine Everything
Step 1
Stir in the sautéed onions and garlic.
Step 2
Add chopped steak — mix it in or pile on top.
Step 3
Garnish with cilantro/green onions + a squeeze of lime.
