Story
There are certain recipes that immediately tell you your kitchen is about to smell incredible.
This is one of them.
Because the second garlic butter hits toasted Italian bread, Alfredo sauce starts bubbling, and mozzarella melts over juicy seasoned chicken… you already know things are about to get out of hand.
This recipe is also part of my ongoing series called: “If I had a vegetarian daughter, this is what I would make her.”
Which obviously makes no sense because there’s chicken all over this thing… but that’s what makes the series better.
At this point I’m convinced garlic bread alone could solve most family arguments. But adding homemade Alfredo sauce, crispy bread, juicy chicken, melted mozzarella, and extra Parmesan cheese turns it into something genuinely ridiculous.
The best part is the texture.
The bread gets crispy around the edges while staying soft in the middle. The chicken stays juicy, the Alfredo melts into every crack of the bread, and the cheese on top gets bubbly and golden straight out of the oven.
This is one of those recipes where nobody waits for it to cool down. Everybody immediately burns the roof of their mouth because it smells too good to leave alone.
And honestly? Worth it every single time.

Chicken
1 pound boneless skinless chicken breasts, halved lengthwise and pounded thin
Salt
1 tablespoon smoked paprika
1 tablespoon garlic powder
1 teaspoon black pepper
1 teaspoon onion powder
2 tablespoons clarified butter or neutral oil
Alfredo Sauce
2 tablespoons butter
2 tablespoons fresh garlic, minced
1 cup heavy whipping cream
3/4 cup freshly grated Parmesan cheese
Salt
1 teaspoon black pepper
Garlic Butter Spread
1/2 cup unsalted butter, softened
1 tablespoon fresh garlic, minced
1 tablespoon fresh parsley, finely chopped
Pinch of salt
Assembly
1 loaf Italian bread
1 cup mozzarella cheese
Fresh parsley, for garnish
Preheat the oven to 350°F.
Pat the chicken dry with paper towels. Season both sides with salt, smoked paprika, garlic powder, black pepper, and onion powder.
Heat clarified butter or oil in a skillet over medium heat. Add the chicken and cook for about 4–5 minutes per side until golden brown and cooked through to 165°F internally.
Remove the chicken from the pan and let it rest for a few minutes before slicing into strips or bite-sized pieces.
In a separate pan, melt the butter over medium-low heat. Add the minced garlic and cook for about 30 seconds until fragrant, being careful not to brown it.
Slowly pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese a little at a time until fully melted and smooth.
Season the Alfredo sauce with salt and black pepper. Continue simmering for a few minutes until slightly thickened.
In a bowl, combine the softened butter, garlic, parsley, and a pinch of salt to make the garlic butter spread.
Slice the Italian bread in half lengthwise and spread a generous layer of garlic butter across both halves.
Spoon Alfredo sauce over the bread, then add mozzarella cheese and sliced chicken evenly across the top.
Add another light layer of Alfredo sauce over the chicken along with extra Parmesan cheese if desired.
Transfer the bread onto a baking sheet and bake for 20–25 minutes until the bread is crispy around the edges and the cheese is melted and golden brown.
Garnish with fresh parsley and serve hot with extra Alfredo sauce on the side if you want to get excessive with it.
Meatlicious Tip
Freshly grated Parmesan makes a huge difference in Alfredo sauce texture.
Don’t boil the Alfredo sauce aggressively or it can separate.
Pounding the chicken evenly helps it stay tender and cook fast.
If you want even crispier bread, broil it for the final 1–2 minutes.
Let the bread rest for a couple minutes before slicing so the cheese doesn’t completely slide off.
This reheats surprisingly well in the air fryer.
