Cheeseburger Dip🍔
All the flavors of a classic cheeseburger, melted into one dangerously scoopable dip.
This dip exists for people who can’t decide between burgers and appetizers — so they choose both. It’s beefy, cheesy, a little tangy, and finished with that unmistakable cheeseburger crunch from pickles and onions on top.
It eats like a loaded burger but scoops like queso. Perfect for game days, parties, or any time you want something that disappears faster than you planned.
Dip
2 lb ground beef
1 medium yellow onion, chopped
4 garlic cloves, minced
2 tablespoons burger rub or seasoning blend
2 tablespoons Worcestershire sauce
1 lb Velveeta cheese, cubed
8 oz sharp cheddar cheese, shredded
¼ cup ketchup
¼ cup mayonnaise
2 tablespoons original hot sauce
Topping
1 plum tomato, diced
¼ cup diced yellow onion
¼ cup diced dill pickle
1 tablespoon dill pickle brine
Step 1
Preheat grill, smoker, or oven to 350°F.
Step 2
In a large cast iron skillet over medium heat, cook the ground beef until fully browned, breaking it apart as it cooks (5–7 minutes). Remove beef with a slotted spoon and set aside, leaving rendered fat in the pan.
Step 3
Add chopped onion to the skillet and cook until softened, about 5 minutes. Stir in garlic and cook for 1 minute until fragrant. Return the beef to the pan and add burger seasoning, Worcestershire sauce, Velveeta, cheddar, ketchup, mayonnaise, and hot sauce. Stir until everything is combined and the cheese begins to melt.
Step 4
Smooth the mixture evenly in the skillet and place it on the grill. Close the lid and cook at 350°F for 15–20 minutes, until fully melted and bubbling around the edges.
Step 5
While the dip cooks, combine diced tomato, onion, pickle, and pickle brine in a small bowl.
Step 6
Remove skillet from the grill, top with the fresh pickle mixture, and serve hot.
